A new restaurant will be coming to Hopewell Borough. My friends at Mercer Eats are reporting that an old restaurant will become new again.

The Hopewell Bistro, on East Broad Street, will be torn down and replaced by a new eatery. But, the new place will look similar to the old one.

The attorney for the project, Gary Forshner, said in a recent Hopewell Borough Planning Board meeting, "What we're proposing to do is rebuild the Hopewell Bistro to look substantially more like it did 100 years ago. We're going to rebuild it in a way that is far more functional."

The new restaurant will be operated by the Genesis Hospitality group...certainly not new to the local restaurant scene. The group also runs The Peacock Inn, The Perch at Peacock Inn, and Lambertville Station and Inn.

The new restaurant will have six 1-bedroom apartment above it, offering a less expensive housing option for younger people just starting out, or older people wanting to downsize, but, stay in the quaint area.

Several residents voiced their concerns at the meeting about the new restaurant having enough parking, and they were told there was indeed enough parking. One resident, who lives very close to the building disagreed, but, is still in favor of the new restaurant bringing back the old Bistro's charm.

No word on when demolition will begin or how long the project will take. I'll let you know if I hear anything else.

Hopefully, we'll see this new restaurant open in 2022.
