A former Naval Officer turned brewer from Plainsboro is opening a distillery in Hillsborough, according to The Patch.

That's quite a change in careers. Lol. His name is Camden Winkelstein, and he's become partners with another local brewer, Jeremy Lees, owner of Flounder Brewing. The new distillery will be called Bellemara Distillery, and will be located at Carriage Farm, 2 Clerico Lane in Hillsborough, right off Route 206.

Winkelstein told The Patch, "Distilleries and breweries are a great match, great symbiosis. We will be right next to each other and the barn is a beautiful place."

It won't be in the 100 year old barn though. It needed too much work, so they're tearing it down and rebuilding it, but, plan to keep its integrity.

The new Bellemara Distillery will distill grain to whiskey, bourbon, and gin. There will be a tasting room, tours, and a chance to learn about the process.
