A new French bistro, Kristine's, has opened on Witherspoon Street in Princeton, according to The Patch.

There will be lots of healthy food choices including vegan, vegetarian, dairy free, and gluten free dishes, along with more traditional fare. Their website describes the place as Fresh, Simple, French.

Right now it's open 7 days a week for dinner, but, in a few weeks, it will expand its hours to include breakfast and lunch.

The bar sounds cool. It has a u-shaped, zinc bar with a 100% French wine list. The article says it also has "creative cocktails" highlighting French liquors and beer from France, Belgium, and the United States.

The chef's name is Nicolas Demurge...sounds French, doesn't it? He'll be using fresh ingredients, and has new ideas, and a fresh take on French bistro cuisine.

I'm sure the locals are excited. It looks like The Crew has a new place to try.
