I saw this list in USA Today, and noticed that there are some local options for us. Score.

At Applebees, the $1 Neighborhood Drink of the Month, also available for Cinco de Mayo, is the Dollarita. There are Applebees in Lawrence, Hamilton, and Newtown.

At Bahama Breeze, the deal lasts through May 31 (except for Mother's Day at participating locations), get $5 classic margaritas and $10 Create Your Own Premium Tequila and Rum Flights. Yum. There's a Bahama Breeze in MarketFair.

At Chilis, the Tequila Trifecta, the Presidente Margarita, and draft beer  are each $5 on Cinco Sunday. There's a Chili's in Hamilton Marketplace, Freehold, Fairless Hills, and  Bensalem.

At Chipotle, you'll get free delivery from DoorDash, on your $10 or more order on Cinco Sunday. The order has to be placed through DoorDash's website or app, the Chipotle app or Chipotle's website. No promo code is needed. There's a Chipotle on Route 1 in West Windsor, near Trader Joe's and Lowe's.
