Opening Date Set for Chipotle in Mercer Mall

Over the last few weeks and months, there has been a lot of news about restaurants located along the Route 1 corridor in Mercer County.

Back in August, we told you that a new Chipotle would be coming to Mercer Mall in Lawrenceville, NJ. Now, we've found out when that restaurant will be opening.

According to nj.com, the Mercer Mall Chipotle, which is taking over half the space that formerly was home to Outback Steakhouse, will open on Dec. 11.

Chipotle will join several other restaurants in Mercer Mall, including Olive Garden, Bonefish Grill, Habit Burger, Zoe's Kitchen, and Hooters.

There is currently a Chipotle located about 2 miles north of Mercer Mall in the Square at West Windsor. (That's the shopping center that is also home to Lowe's and Trader Joe's).

A few weeks ago, we reported on a new restaurant that is coming to the Square at West Windsor.

Just last week, we announced the opening date for the new Shake Shack on Route 1.

And earlier today, we reported that the

Houlihan's in Mercer Mall had abruptly closed.

Wow. What's next? A new Chick-fil-A? Who knows...maybe???
